Paul E. Carroll is the General Manager of Hospitality and Facilities at St. Thomas Aquinas College, where he has served since 2016. He began his career with Aramark in 2013 at LIU Post as Director of Operations. In his current role, Paul oversees both dining services for Aramark’s Collegiate Hospitality and custodial services for Aramark Facilities. Before joining Aramark, he was the owner-operator of two restaurants and gained extensive experience across various hospitality sectors, including cultural institutions, business and industry, sports and entertainment, and country clubs. Outside of work, Paul is an avid homebrewer and a member of the Westchester County Homebrewers Association. He lives in Tarrytown, New York, with his wife, Mary.
